James Beard Award-winning Chef Matt Vawter opened his first Breckenridge, Colorado restaurant, Rootstalk, in 2020, and since then, we've grown into Rootstalk Hospitality, with two restaurants and a bakery up and down Breck’s Main Street, each with its own menu and personality. What ties them together is how we work, or as we call it, The Root System: cooking with the best of what Colorado has to offer, knowing the farmers and ranchers who grow our food, and taking genuine care of the people around us, from our team to our community to our guests.
